While most customers do not refer to it as game meat, most of them do notice a game flavor, but is not overpowering. Since grass fed cattle receive no corn or grain, there is very little marbling in the meat. The marbling effect of meat comes from fat deposits in the meat, which are a result of the corn or grain that is fed to cattle in the feedlot. There is usually much less marbling in the meat because it is leaner. As a result of less marbling, grass fed meat usually ranks as Select or Choice beef according to the USDA.HOW MUCH MEAT DO I GET?That depends on how big the steer is when he goes to the butcher shop. In general, the packaged meat is about 1/3 of the live weight of the cattle. Most of our grass fed cattle go to the butcher shop weighing around 950 lbs.
